I placed my sauna at the other end of the house (40x40 huge!), but despite there being perfectly good an high environment chairs in the dining area a lot of sims just head straight to my sauna

That drives me nuts when some sims bypass the dining area and go elsewhere to eat. Especially when they go outside in the middle of winter to eat at the table on the deck or patio.
Perhaps where it is a sauna would locking everyone out work and unlock when you want them to use the or do not mind when they use the sauna? OR Have you tried icarus_allsorts Set The Table mod? I've had good results keeping them all together when the table is set.

TFM has a mod that requires Sims to eat at the dining table if there is one. This solves the problem of them eating at counter islands, etc., and I'm sure it would do the same to prevent the Sauna eating. http://simsasylum.com/tfm/index.php?/to ... the-table/

Registration is required as you probably know.

Also, as brappl suggested, Icarus' Set the table mod will force tthe action if you use the call to meal interaction. TFM's would be handy for people who are autonomously eating leftovers or whatever.

It does not seem to work ... my sims still go to the Sauna

There is a mod at the Asylum in TFM's section for always eating at the table here http://simsasylum.com/tfm/index.php?/to ... the-table/ . Works great for me
