These would be in the strings (STBL resource), not the tuning
They can either be tweaked manually in S3PE, or a tool like STBLManager or S3Translate.

Simple enough to do to the NRaas Careers modules and any custom careers made for it.
If you also want to change the EA ones, you'll want to use STBLizer which actually has a career template already. This is because the EA strings all belong to One Master STBL that would be a nightmare to edit directly.

From what I can see from the Journalism examples, the female variants are the second instance every time.
Whether that is the same across all of the templates, I am not sure. You may need to make a test for one of the ambiguous ones and see how it appears ingame.
