can you use mastercontroller to give sims more than 5 traits?
if i use mastercontroller add trait to add a 6th non-hidden trait, will that cause any issues with the game?

No issues, but two things to be aware of:
1 - If you travel the sim to a different world, they will stand to lose any extra traits in the process (in either travel direction) and they will need to be added back in again upon arrival.
2 - Any extra traits should be removed just prior to the sim aging up.
If you have the Uni EP, then adult sims can have up to 7 trait slots filled up by assigning the graduation and the social group reward traits without having to worry about either of the above even if the sim has never been to Uni nor participated in social group advancement.
