Is there a way to change your Sims' work schedule?
Alternatively, is there a list somewhere of the jobs and the schedules you end up working if you master those careers? Thanks in advance!

No, this is career based. Not sim based.
For EA rabbithole careers, job hours are hard-coded into the game files. It's done through data tables, each career has a table with different hours for each of up to 10 job levels. There is an entirely separate table for urban worlds (e.g., Bridgeport), as each level on each career has altered job hours and pay, etc., for these worlds. Some careers branch off part way through (music, law enforcement among others) so the tables split off after a certain mid-range level. Part time jobs and the more participatory careers (Ambitions) have their own tables.
The work hours per job level per job are pretty well documented on The Sims Wiki and Carl's website.

I changed all of the rabbit hole work hours in my game with a simple tuning mod. The hours are found in the Careers XML. Tuning mods are very easy to make, and there are several tutorials available on the net. Hope this helps

I don't suppose you could upload the mod anywhere? I know absolutely nothing about how to mod. @igazor, Thanks a bunch for those links. If I can't figure out how to change them using a tuner of some kind, I might have to consider a job change just to keep my Sims on roughly the same schedule.

I used a lovely tutorial from Mod the Sims when I started XML modding: Sims 3 XML Tuning Modding. That should get you on the right track. As SillySimmerGirl said, you can find the hours for each EA career in the Careers XML file inside the GameplayData package. Export that file, then import it into a blank package in s3pe. So on step 3, it tells me to open the Gameplay folder, but there isn't a Game folder (which I'm supposed to find it in) so I'm stuck already. I even searched my computer for "gameplay" and no folders came up

That's because you have a Steam install, the TS3 installation directory is different.
Usually it goes C:\Program Files (x86)\Steam\steamapps\common\The Sims 3\Game\Bin\Gameplay. There can still be some variation, but once you get to the Game folder it should all look the same on any install type.

Ah, well thank you for that. Yes it is confusing because I do have an Electronic Arts folder entirely separate from Steam so I guess it split its own files when it installed (for some reason).
ETA: The "Leaderofthefreeworld" section is very close to the beginning of the Criminal section... just like in real life!

I imagine the main reason for that is probably because everyone would want different versions, depending on their personal preference.
