I was wondering if there is a setting that will give my family's children/teens the summer off from school? 

The following are the packs/stuff I don't have yet in case I need one of them to do it (if there is a way)

Summer vacations only require the base game and are a function of the StoryProgression mod. On City Hall or an in-game computer,

NRaas > SP > General Options > Options: Careers > Options: School > Summer Off > (specify the schools)
NRaas > SP > General Options > Options: Careers > Options: School > Summer Off Days > (specify the days of the week to be off-days, default is all of them)
(SP Career add-on module required)

I downloaded all the add on files for Career and the Options:School > Summer Off > (specify the schools) and the > Summer off Days> are not listed in my choices.

Do I have to manually add them under Caste?

The only add ons from Careers I didn't add were the Assassination and Mobsters. But there is nothing listed under careers for school.

You are confusing two totally different mods. But don't worry, you are not the first one to do that.

This is the Careers base mod. It has several add-on modules. The Careers Schools module is interesting because it allows for homeschooling and for custom specialty schools that teach special skills and convene in places like the community theatre and military lot. This mod has nothing to do with summer vacations and is not the one I meant.

This is the StoryProgression base mod. It has several (many) add-on modules. The SP Career module is the one that extends the mod's reach further into careers and schools (since "school" is considered a career for children and teens). This is the one I meant.

By the way, off-topic but as much as I am a fan of so much that we offer here, personally I have no use for the Assassination skill nor the Mobster career either.
